The Flavors of our Place

Cuisine used to be culture and not just flavors. The daily table was a celebration and gathered around it all the members of the family.
Cooking food was very much a morning job for the housewife. "Food must rest before we eat it..." Grandma Melpomeni used to say.
The table was a joy, a challenge for the gourmets' sense of smell and sight. From the windows came the musky smell of food and happy voices, laughter, and sometimes songs could be heard.
People, then, were happy with few things. With their imagination and the passion that possessed them, they made the most of the few ingredients they had and managed to prepare particularly delicious dishes.
The way they cooked was a creation of years of collective knowledge and experience. The materials were sometimes added "by eye" or "as much as possible".
The foods in this book, apart from their taste, fill us with nostalgia and memories. How many sweet memories does the name of each food or dessert in this book hold? Memories kept in our hearts and minds that did not change over time.
